Instructions:

For the carrot quiche, prepare a yeast dough from the ingredients. Leave to rise in a warm place for approx. 30 minutes. During this time, peel the carrots and slice them finely.

Chop the ham and cut the spring onions into rings. Put oil in a pan and saute carrots, spring onions and ham for 4-5 minutes. Season with salt, pepper, ginger, chili and coriander.

Let cool briefly. Mix eggs, crème fraîche and whipped cream. Knead the dough and roll it out to the size of the quiche dish.

Grease the mold, place the dough in the mold and pull up the edge. Put the prepared carrots into the form, pour the cream over it and bake in the preheated oven for 30-35 minutes at approx. 175 °C.
