For the cauliflower casserole, cut the cauliflower into small florets, wash and cook in salted water until al dente, drain the water, let the cauliflower cool.

Heat the oil in a small saucepan, lightly toast the flour and add the milk, bring to the boil and mix well, add salt, pepper and season with nutmeg. Cut ham and wild garlic into fine strips.

Grease a baking dish and sprinkle with breadcrumbs. Put the cauliflower in it, spread the ham and the wild garlic on it, spread the béchamel sauce on it and cover it with cheese.

Put in the preheated oven and bake at 200° for about 30 minutes. The cheese should have a nice golden color.
