Instructions:

For the celery in batter, separate the eggs. Mix the flour with salt, oil, egg yolks and white wine to a thick batter. Let the dough rest for about half an hour.

Then beat the egg whites until stiff and fold them in carefully. Peel celery, cut into 1 cm thick slices and boil in salted water until tender to the core, let cool.

Heat oil, coat celery pieces in flour, pull through batter and bake in hot oil until golden brown on both sides.
