Peel potatoes and celery and cut into cubes of about 3 cm. Mix lightly salted water with a dash of milk and boil the vegetables in it until soft. Then place in a food processor, season with salt, pepper, nutmeg and a squeeze of lemon juice and finely blend with the cold butter.
