Preheat the kitchen stove to 180 °C. Clean the fish, rinse it and rub it dry with kitchen roll. Sprinkle the fish with salt inside and out and pour a little oil over it. Put the fish in the kitchen oven, place a few cherry tomatoes in the belly of the fish and spread the remaining tomatoes evenly around the fish. In the meantime, cut the white part and a little bit of the green part of the leek into fine rings. After 15 minutes (half of the cooking time) sprinkle about one third of the leek rings over the fish. Sauté the remaining leek together with a tablespoon of oil and a little bit of salt. Remove the grouper from the stove (after a total of half an hour) and serve it on the spot with the steamed vegetables and black olives.
