For the chanterelles on ham, clean the chanterelles, wash, cut into fine slices. Finely chop the basil leaves.

Fry the onion in heated butter, add the mushrooms, pour in white wine, steam until soft and dust with flour.

Preheat oven to 220 °C. Stir in crème fraîche with salt, pepper and caraway seeds. Whip the cream until stiff and fold in.

Line small casserole dishes with ham, spread mushroom mixture on top, sprinkle with cheese and bake the chanterelles on ham for 10 minutes.
