For the Csárdás sauce make a mayonnaise from egg yolk and oil, salt and lemon juice.

Mix with tomato paste, saute finely chopped shallots in white wine until the liquid has reduced to a syrupy consistency. Stir into the mayonnaise together with the finely chopped gherkins and peppers.

Season Csárdás sauce with salt and pepper.
