Instructions:

A great cake recipe for any occasion:

1. simmer potatoes in a saucepan of lightly salted boiling water for ten minutes and cool. Remove peel from potatoes and grate on a coarse grater. Place the grated potatoes in a large wide dish.

Mix in onions, cheese and parsley. Season well with salt and freshly ground pepper. Divide potato mixture into four on the spot portions and shape into patties.

3. heat half of the olive oil and butter in a frying pan and toast two potato cakes over high heat for 1 minute, then reduce heat and continue to fry for 5 min until golden brown on bottom. Turn and roast for another 5 min.

4. using the other half of the oil and butter, bake the remaining 2 cakes in the same way. Place on a heated serving plate, garnish and bring to the table on the spot.

Tip: The potato cakes should be pressed level while frying, otherwise they will burn on the outside before they are cooked on the inside.

These grated potato cakes are also called straw cakes because they resemble straw mats. Serve with leaf salad or tomato sauce.
