For the cheese cutlet, first prepare the dough with which the pork, turkey, chicken or beef cutlets will be coated. To do this, make a pancake dough with the egg, milk, flour and a pinch of salt. Let it rest for a while and in the meantime grate the cheese and salt and pepper the cutlets.

Then add the grated cheese to the pancake mixture and pull the seasoned escalopes through this mixture and fry them in a pan in hot fat. If there is not enough mixture sticking to the schnitzel, you can spoon some of the batter onto the schnitzel when it is already in the pan. The finished cheese cutlets are best dabbed with kitchen roll.
