Melt the butter and brown the flour in it. Add cheese and extinguish with milk. Bring to the boil and cool. Fold in egg yolks, season with spices.

Beat egg whites until stiff and stir in loosely. Fill into a pudding mold with lid and simmer in a water bath for 40 minutes.

Serve with: colorful salad platter
