For the cheese wholemeal balls, cream butter with crème fraîche and curd cheese.

Peel eggs and remove yolks. Finely crumble half of the bread slices and mix well with the yolks into the butter mixture. It is best to mix briefly. Add processed cheese, chopped capers, anchovies (paste) and garlic and season with cumin and paprika. Finely chop the egg white, finely crumble the remaining bread and mix with the chopped egg white and chives. Using a small spoon, form small piles or balls of the mixture and roll them in the egg-bread mixture, pressing down lightly. Place the whole-grain cheese balls in decorative paper capsules.
