For the cherry pancake, slowly heat the milk with butter and a pinch of salt. Add the semolina. Stir constantly. Bring to the boil and continue stirring until the porridge separates from the bottom. Allow to swell and cool.

In the meantime, wash and pit the cherries. Heat the oil in a shallow pan. Pour in the semolina mixture and let it bake until golden brown. While doing so, break up and stir with a wooden spoon. Before the mixture is completely baked, mix in the cherries and bake briefly.

Before serving, sprinkle the cherry pancake with sugar.
