Chervil Quark Cake with Eggs and Smoked Salmon

Instructions:

Knead the flour, butter, salt and whipping cream together to form a smooth dough. Thinly dust a surface with flour and roll out the dough to a 32 cm ø plate. Rest for 10 min. Spread out a cake springform pan with the bottom, press the edge well smooth. Spread with parchment paper, and fill with lentils. Bake for 20 min at 175 °C. Remove lentils and parchment paper. Mix the egg yolks with the milk and brush the base and edges with it. Bake again for 10 min. Cool down.

Filling: Mix the curd cheese with the fresh cream. Season with a clove of garlic, the juice of a lemon and salt. Stir in the chervil.

Decorate: Pluck the chervil from the stems and place around the outside of the base. Dice the smoked salmon and place in a circle on top of the curd. Peel the eggs. Separate the egg yolks from the egg.

Chop egg yolks into small pieces and also place in a circle on top of curd.

Chop the egg whites and place in the center form.
