Instructions:

Boil the peeled chestnuts until soft and then strain them through a sieve.

Put the water with the sugar at a gentle temperature and stir until the sugar has dissolved. Then boil until bubbles rise to the surface.

Add the chestnut puree and the vanilla bean and make everything together, stirring continuously for about 20 minutes.

Check the jelly, remove the vanilla bean and pour the jam into jars.
