For the chicken curry my way, finely slice the leeks and carrots. Sauté slowly in a pan with olive oil. Cut the bell bell pepper into fine strips and add to the pan along with the bean sprouts and chopped or grated ginger. When the vegetables are cooked, add the chicken cut into small pieces.

Add all the spices mentioned above to taste. When the meat is cooked, add the coconut milk, let it warm up briefly and serve the chicken curry my way.
