Mix the flour with a little salt and pepper. Finely chop the garlic, peel the onion, cut into fine rings.

Rinse the chicken fillets with cold water and pat dry. Cut the fillets into small cubes and turn them in the seasoned flour.

Heat Monini Classico olive oil in a pan and sauté garlic and onions until translucent. Lift out, add the chicken cubes to the fat and fry until golden brown on all sides.

Add garlic and onions again, deglaze with wine and pour in hot chicken soup. Season with saffron and pepper. Bring to a boil and simmer, covered, for about 15 minutes.
