For the chicken liver, fry the liver in fat over medium heat for 3 minutes. Remove liver and keep warm. Roast the pumpkin for 3 minutes, add apple slices, sugar and roast for another 2 minutes.

Add liver, season, pour Calvados and let it infuse for another minute.
