Instructions:

For the chicken pineapple rice salad, cook the rice and let it cool. Cut the chicken into small pieces and fry in oil. Steam the peas, drain the canned corn and pineapple.

If fresh pineapple, cut it into small pieces. Wash and clean bell bell pepper and cut into fine strips. Peel carrot and grate coarsely.

Squeeze orange and mix with mayonnaise, mustard, vinegar and spices and season to taste. Mix the cooled cooked rice with the chicken and vegetables.

Then mix the marinade with the salad ingredients. Finally, fold in the parsley (keep some parsley back), seasoning if necessary.

Serve on radicchio or leaf salad and sprinkle with the reserved parsley.
