Instructions:

For the chicken saté with nut sauce, skin the chicken breasts and cut lengthwise to the grain into 5 mm wide strips.

Mix all the ingredients for the marinade together, marinate the meat with it and let it marinate, covered, in the refrigerator for 24 hours.

Roast the nuts for 4 minutes until the shell comes off. In a dish towel, rub the skins well. Heat the nuts and honey until the honey is liquid.

Add chicken stock and port and reduce by half over high heat, then puree. Add oil. Thread the chicken strips onto 8 wooden skewers in an accordion shape and sauté in oil or on a grill.
