Instructions:

Soak the chickpeas for one night.

Slice the cucumber into thin slices, sprinkle enough salt on top and set aside. Cook the chickpeas until soft and cool. Rinse and drain the cucumber slices. Mix the chickpeas and cucumber in a baking dish. Spread the onion, cut into rings, evenly over the top. Garnish with fresh mint and a few lettuce leaves.

Mix the juice of one lemon, olive oil, salt and pepper and pour this sauce over the lettuce.
