Instructions:

Stir vinegar with all ingredients up to and including parsley, season, set aside.

Heat clarified butter, roast chicken meat in portions for 5 min, remove.

Mix paprika, salt and pepper in a baking dish, turn chicken in it to the other side. Divide cicorino and chicory leaves evenly on plates. Mix lettuce strips with sauce, arrange on lettuce leaves, spread chicken evenly on top. Heat butter in a frying pan, toast bread cubes over medium heat until crispy, serve with lettuce salad.

Tip: use tofu cubes marinated in soy sauce instead of chicken meat.
