For the Chinese asparagus soup, season one liter of hot (not boiling) chicken soup with salt, sherry, soy sauce and cayenne pepper.

Bind with a spoonful of mayonnaise. Cut 400 g of asparagus cooked in salted water into pieces, add to the soup and let it steep (not boil) for ten minutes.
