For the chocolate cream cake, first break the Christmas chocolate into pieces and dissolve in the hot whipped cream. Chill the cream for at least 2 hours and let it get completely cold.

Mix the flour and baking powder well, add the grated chocolate and the tiger nut flour. Add the beaten egg whites with salt and the oil and mix carefully with a spatula.

Pour the mixture into a greased, floured cake tin (26 cm) and bake in a preheated oven at 180 degrees Celsius for 50 minutes.

Test the cake with chopsticks. When the cake is ready, remove from the pan and let cool. Cut in half when cold, spread with the plum jam.

Whip the cream with a hand mixer one half as a filling, spread the second on the outside of the cake. Refrigerate.
