For the chocolate prunes, make a kneaded dough from the ingredients, except for the chocolate coating. Wrap the dough in plastic wrap and refrigerate for 2 hours.

Then roll the dough on a floured work surface to a thickness of 1 cm, cut into strips 2 cm wide and 6 cm long. Place these strips on a prepared baking sheet and bake in a preheated oven at 200 °C for 12-14 minutes until golden brown.

Let the baked Printen cool on a cooling rack. In the meantime, chop the couverture, melt slowly and heat to 42 °C. Allow to cool and heat again to 29 °C. Always stir well.

Then dip the Printen individually into the tempered chocolate coating, allow to drip off briefly and place on baking paper to cool and set.

Remove the finished chocolate printen from the baking paper and store in a tightly closing tin.
