For the chocolate souffle, beat egg whites until stiff. Beat yolks with vanilla sugar, sugar and rum over steam.

Break the chocolate into pieces, gradually stir into the yolk mixture and allow to melt. Butter the ramekins and sprinkle with sugar, pour in the mixture.

Place in steamer at 90 °C for 20 minutes.
