A great pasta dish for any occasion:

(*) for a square of 40x40cm, gives 10 pieces of 4cm thickness Sift the flour in a large enough bowl, mix with the dry baker’s yeast, the sugar and the salt. Add the milk and knead until the dough is smooth and soft. Cover and let rise in a warm place until the dough has doubled in volume.

Roll out the dough into a square. Brush the dough with the melted butter and sprinkle evenly with the raisins and cinnamon sugar, leaving a three-inch border on one side. Roll up the dough from the opposite side and cut into on-the-spot pieces.

Accurately butter a cake springform pan and sprinkle with cinnamon sugar. Place the dough pieces in with one cut side up, leaving a small space between each piece. Let rise for another twenty minutes.

Preheat the oven to 175 degrees (gas mark 2).

Bake the cinnamon noodles in the hot oven for twenty-five minutes until golden. Ten minutes before the end of the baking time, brush with the beaten egg yolk. Cool on a cooling rack.
