For the coconut biscuits, beat egg whites with salt over steam until very stiff. Continue beating for another 3 minutes without steam. Carefully fold in coconut and 1 tablespoon powdered sugar.

Pour the mixture into a piping bag and pipe bushels onto a baking tray lined with baking paper. Bake at 160 degrees until the biscuits have a nice color and come off the baking sheet.
