Sauce

Sauté lemongrass and shallot in hot fat in a saucepan. Add stock and coconut milk, cook a little. Pass through a sieve. Season the sauce with chili spice, salt and freshly ground pepper. Keep warm. Before serving, blend sauce briefly with a blender.

Example: Monkfish on vegetables with glass noodles

Cook glass noodles in boiling salted water for 1 minute. Drain and drain.

In a frying pan, sauté onion cubes and carrot strips in hot fat for about 3 minutes, stirring until soft. Add spring onions, celery, cabbage, mushrooms and sprouts, continue steaming for approx. 3 min. Fold in glass noodles. Season vegetables with green turmeric, curry paste, salt and pepper. Add tomato cubes, heat just briefly.

Rinse monkfish, dry and cut into pieces. Season. Roast in hot fat for 3-4 minutes. Fold in whipped cream.

Serve:

Arrange monkfish on vegetables, garnish with chive rolls, basil and chervil if desired. Serve with sauce.
