Instructions:

For the coconut waffles with citrus salad, first toast the coconut flakes in a pan without fat, let cool.

Peel the oranges, grapefruit and limes so that the white skin is completely removed. Then cut out the fillets between the cell walls with a sharp knife. If juice comes out, collect it. Cut the vanilla pod in half lengthwise and scrape out the pulp. Mix cornstarch with 2 tablespoons of the collected citrus juice until smooth. Let the sugar caramelize in a saucepan. Add orange juice, vanilla bean and pulp, and finely chopped lemon balm stems and bring to a boil. Stir in starch and bring to a boil again. Pour over fruit, let cool.

For the waffle batter, mix coconut flakes, flour, baking powder and salt. Cream butter with sugar and add eggs one at a time. Stir in coconut milk alternately with flour mixture.
