Preheat kitchen stove to 180 °C /350 °C F/Gas 4. Drizzle a little oil onto four ovenproof plates and place a fish fillet on each. Add sherry, tomato quarters, chorizo and the remaining oil to the plates. Top each with 2 basil leaves, season with salt and season with pepper. Cover the plates with foil and bake in the oven for 10-20 minutes, depending on the thickness of the fish fillets, until the fish is cooked.
Remove the foil and drizzle a little juice of a lemon over it.
“Buttered cabbage” is recommended to go with it. I would grate pointed cabbage and stew it with butter until not too soft, and serve it with jacket potatoes.
