Instructions:

Cut the avocados in half, remove the pit, scoop out the flesh and mash with a little lemon juice, garlic and chicken stock. Cut half of the arugula leaves into very fine strips and also mash them in the stock. Add the whipped cream and season the soup. Cool well and then season repeatedly. Serve sprinkled with the remaining arugula.
