Let the milk boil. Knead the butter with the flour, add to the milk, simmer on low heat for another 5 min. and then cool. Remove the skins from the sharon fruit. Peel off 1 1/2 fruits, cut into coarse pieces and sugar. Cut the remaining half, unpeeled, into fine wedges and set aside.

Blend the milk with the sweetened juice of one lemon, white wine, Sharon fruit pieces and vanilla sugar in a hand mixer, pass through a fine sieve and set aside to cool. In the meantime, whip the whipped cream until stiff. Fill the cold dish into 4 soup cups or plates and garnish with the sharons and the whipped cream.
