For the coq au vin (chicken in red wine) divide chicken into 8 pieces, rub with salt and pepper and fry in butter all around. Remove and keep warm.In the meat residue diced smoked bacon, add onion and mushrooms, fry briefly and stir in tomato paste. Dust with flour, deglaze with half of red wine and bring to a boil.

Pour in chicken broth and remaining red wine. Season with garlic, peppercorns and thyme.Pour the finished sauce over the chicken and steam in an ovenproof dish until tender. Season the chicken in red wine with salt and pepper.
