For the corn salad, finely dice the peppers. Strain corn and bean mixture through a sieve, rinse and drain.

Season low-fat yogurt with balsamic vinegar, salt and pepper.

Toss peppers with corn and bean mixture and marinate with yogurt dressing.

Line two matching bowls, each with a lettuce leaf, and serve filled with the corn salad.
