Put the meat in a wide baking dish form.

Mix well the olive oil with the spices and cover the meat with it.

The meat would become even more aromatic if you pull the rosemary sprigs into the meat with the larding needle.

The cumin makes pork digestible and develops a very good flavor during the grilling.

Marinade the meat for 2 to 3 days.

Then grill, preferably on a charcoal grill enough olive oil to cover the meat.

Tip: Always use aromatic spices to refine your dishes!
