Instructions:

For the cranberry pancakes, first prepare the filling. For the filling, sort out the cranberries, wash, drain well and puree.

Boil the puree with granulated sugar over low heat until thick, about 5 minutes, remove from heat and let cool.

Stir in yogurt. Whip the cream with vanilla sugar until stiff, fold in and refrigerate until ready to fill.

For the dough, mix the flour with milk until smooth. Melt butter, add together with pinch of salt and egg and mix.

Fry 4 thin pancakes in melted butter, fill with cranberry cream and fold twice.

Sprinkle the cranberry pancakes with powdered sugar and serve with whipped cream and cranberry compote.
