For the cream cheese tartlet in filo pastry, put the raisins in a bowl and pour the rum over them. Preheat the oven to 150°C top and bottom heat. Melt the butter. Brush each filo pastry sheet with the melted butter and fold in half, brush again and fold in half again. This will make 5 small squares.

Brush ramekins with remaining butter and line each dish with a filo pastry square. Grate the zest of the lemon. Beat the eggs with the sugar and vanilla sugar and mix with the lemon zest and cream cheese.

Fold in the rum raisins and divide the cream cheese cream among the ramekins. Sprinkle the remaining sugar on top of the cream. Bake cream cheese tartlets in filo pastry for about 30 minutes, until the surface is lightly browned.
