Instructions:

1. at the beginning, cut the pumpkin and eggplant into slices 1 cm thick, season with salt and stand for about 15 min. Then rub dry and fry in olive oil in order.

Add the coarsely chopped garlic and fry briefly. Now cut the onion and the peppers into rings and fry them in the same way in olive oil.

Add the tomatoes, the chopped parsley, the bay leaves and the spices to the roasted vegetables.

4. bake everything together in a large frying pan for about half an hour at 180 degrees. If necessary, the liquid should be reduced a little bit.

5. then the pumpkin pan is ready to serve. Tip: Can be cooled and served warm with potatoes or white bread!
