Melt 30 g of butter in a saucepan, add the flour and stir well. Stirring continuously, gradually pour in the hot milk, then add salt, pepper and nutmeg (freshly grated) and make the white sauce a few min until it is viscous and smooth. Next, remove the saucepan from the heat, pour in the goronzola cheese in pieces and half of the pamersan and stir well. Fill the crêpes with this mixture, roll them up and place them in a baking dish thinly greased with butter. Melt the remaining butter and pour it by the tablespoon over the crêpes, pour the remaining pamersan over them and bake the crêpes for a few minutes in the oven at 190 degrees until they are already brown. This dish can be kept fully prepared in the refrigerator, so it only needs to be baked before serving.
