Instructions:

Melt 30 g of butter, mix in the flour and gradually pour in the hot milk. Stir constantly. Season the sauce with salt and a pinch of freshly grated nutmeg and simmer for a few minutes, stirring constantly. Now remove the saucepan from the heat and fold in the pamersan and egg yolks. Place a slice of cheese on each crêpe, then half a slice of ham. Roll up the crêpes and place them in a baking dish greased with butter. Pour a thin layer of white sauce on top, add the remaining butter in flakes and bake the dish at 190 °C until brown.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
