A light fare that requires little work and only thoughts of sunshine: Today we have crudites (raw white cabbage, tomatoes and carrots).

Select the cabbage, rinse thoroughly and drain. When sorting, make sure to remove the stem because of the bitter substances. After draining, cut into very fine julienne and mix with the salad dressing. The salad dressing consists of coarse sea salt, pepper, a spoonful of vinegar on 2 spoonfuls of oil. It is important that the salt dissolves completely in the vinegar.

Remove the peel from the carrots, rinse them and drain them as well. Later, using a mandoline, shave them lengthwise into narrow strips and then cut them into fine sticks. Season with the juice of one lemon and oil.

Remove the peel from the tomatoes: That is, cut a cross at the bottom of the tomato, put them in boiling water for 3 minutes, remove with a ladle and skin. Cut the stalk into small pieces and either quarter the tomatoes or cut them into large slices with a sharp vegetable knife. Season with the salad dressing.

Peel the onions and cut them into rings or chop them, depending on their size. Arrange the thin strips of carrots, cabbage and tomato slices separately in small dishes, add the onion rings and the chopped tomato.
