A simple but delicious cake recipe:

Let the yeast melt in the water. Mix curd, sugar, flour, salt, butter and eggs and add yeast. Knead until dough is smooth and shiny. Grease the loaf pan (25 cm) well and fill in the dough. Set oven to 50 °C /gas mark 1 and place bread on middle shelf (without preheating). Let the dough rise until it has doubled in size (approx. 20 min). Now put the bread on the lowest rack and turn the oven on 200 °C /gas mark 4 and bake the bread for 30-35 min. Cover with aluminum foil if necessary, as the loaf will brown very quickly.

Makes 18 slices a 565 joules/135 calories

Tastes very good with tart spread and sausage, with low-fat curd cheese and sugar/sweetener 1:1 it should be suitable for diabetics as well. But this information should be checked as a precaution.
