Instructions:

For the curd-grape strudel for the dough, put flour, salt and 3 tbsp. oil in a bowl. Gradually stir in 125 ml lukewarm water. Then knead the dough until it separates from the edge of the bowl. Brush with oil and let rest, covered, for 30 minutes.

For the filling, rinse the grapes with cold water and drain well. Wash the lemon with hot water and rub dry. Grate the lemon peel and squeeze out the juice. Separate the eggs.

Mix the curd cheese with the egg yolks. Now stir in sour cream, milk, sugar, vanilla sugar, lemon juice and zest. Beat the egg whites until stiff and fold into the curd mixture. Roll out the dough on a floured work surface in the shape of a rectangle or prepare the ready-made strudel sheets according to package instructions.

Spread the curd filling on the bottom third and sprinkle the grapes on top. Roll up into a strudel and place seam side down on a baking sheet lined with parchment paper. Whisk the egg and brush the strudel with it. Bake in the preheated oven at 180 °C for about 45 minutes. Allow the curd cheese and grape strudel to cool and serve while still warm.
