For the curry coconut chicken skewers, place the wooden skewers in water for a few hours. Finely chop the cilantro and mix with the coconut milk, yogurt and curry powder. Season to taste with salt and pepper.

Cut the chicken breasts lengthwise into thin strips and skewer on the wooden skewers. Place in the curry sauce and let marinate for several hours. The end of the wooden skewer should not be in the sauce.

Sear the skewers in a pan and let them finish cooking in the oven. Sprinkle with some freshly chopped coriander and serve the curry coconut chicken skewers immediately.
