For the dandelion salad with bacon and garlic croutons, sort out the dandelion, sort out the leaves that are not intact, wash the remaining leaves well. Shake dry in a sieve.

Cut the bacon into tender strips, fry in a hot frying pan – the fat should be rendered, but do not let the bacon brown too much.

For the garlic croutons, cut the bread slices into small cubes, toast in the hot oil until golden. Add the garlic towards the end of the frying time so that it does not burn. Remove and drain on kitchen paper.

Loosely toss the dandelions in a bowl with the pepper and vinegar. Sprinkle the bacon strips over the lettuce and drizzle oil over the top. Mix everything well and serve the dandelion salad sprinkled with bacon and garlic croutons.
