Wash pork, rabbit and poultry well, pat dry with kitchen paper. Cut pork lung roast into cubes, rabbit and poultry into several pieces. Cut blood sausage into slices, bell pepper sausage into small cubes. Chop onions and garlic into cubes as well. Clean beans (remove strings) and divide into smaller, bite-sized pieces.

Scald tomatoes with boiling water, peel off skin, cut into small cubes.

Clean mushrooms and chop if necessary, chop herbs finely.

Heat lard in a large saucepan and fry first the pork, then the rabbit and poultry parts and black pudding, one after the other, lifting each out again.

In the remaining fat, fry the sobrassada cubes together with the onions over high heat. Add garlic and tomatoes and cook briefly.

Put the browned meat back into the casserole and add the soup. Now let it simmer for about 30-40 minutes, half covered.

Then stir in rice as well as green beans, peas, mushrooms and chopped herbs. Season with salt, pepper, saffron threads, cinnamon and cloves and cook everything for about another 20 minutes.

Meanwhile, add some soup or water if necessary, so that a creamy, slightly soupy stew is created.
