Make the potatoes as boiled, peeled potatoes, peel them and mash them in a widespread with a potato masher.

Melt the kuzu in the mineral water and mix well with all the other ingredients (comfrey leaves are finely chopped, nettle tips are put through the herb mill and ribwort leaves as well) until a smooth dough is formed. Grease a shallow round casserole dish with butter and pour the dough into it. Bake at 160 °C in a convection oven for about 50 minutes. Put a bowl of water on the bottom of the oven to keep the bread moist.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
