For the earth apple-pumpkin goulash, finely chop onions and garlic. Halve the peppers, remove the stones and cut into rings. Clean the mushrooms and halve or quarter them. Remove the seeds from the pumpkin and cut out balls from the pumpkin flesh. Peel potatoes and cut into cubes.

Sauté mushrooms in hot butter, then remove from pan.

Melt remaining butter and sauté onions and garlic. Add peppers and pumpkin and sauté. Dust with paprika powder, fry briefly and extinguish with soup.

Add salt, tomato puree, cumin and pepper. Add the potatoes and bring to the boil. Cover and simmer on low heat for about 30 minutes, until potatoes and pumpkin are soft.

Add mushrooms and sour cream, stir well, boil again briefly and season the potato-pumpkin goulash with salt and pepper.
