Instructions:

For the Easter cake, separate the eggs. Beat the egg whites until stiff. Beat egg yolks and baking sugar until foamy and then add margarine. Melt the chocolate and stir into the yolk mixture.

Sift flour with baking powder and nuts and stir into the yolk mixture alternately with the beaten egg whites. Grease and flour 2 cake pans (20 cm diameter) and bake at 160 degrees until golden brown.

For the chocolate ganache, bring the whipping cream to the boil and remove from the heat. Dissolve the chopped chocolate in it, stir until smooth and chill. Allow the cakes to cool and cut through once.

Spread with apricot jam and with a little chocolate ganache. Refrigerate for 1/2 hour and spread the cakes all around with ganache, repeat process until a nice smooth surface is formed.

Roll out the fondant and wrap the cakes with it. Form Easter bunny head, feet and paws from white fondant and decorate the Easter cake with flowers as desired.
