Fill a large gratin dish with straw.
Season the eels with salt and season with pepper. Place eels, perhaps rolled into rings, on straw. Cook in hot air oven at 175 °C for 30 minutes.
Do not be afraid! The straw will not burn at this heat. It will only brown a little bit. Even if you use a normal oven and therefore have to increase the heat a little bit, you will not have to use the fire extinguisher.
